It's Wednesday! Here's a recipe I want to share with you.
Here's what you might want.
- 2 Handfuls of Cherry Tomatoes
- 1 Ripe Avocado
- 1/2 Can of Sweet Corn
- 1 Handful of Cilantro
- 1 Lime (Juice)
- 1/2 Medium Red Onion
- Salt & Pepper to Taste
- 1/2 Tablespoon of Olive Oil
Steps:
- Dice cherry tomatoes, avocado, and red onion, add to bowl.
- Drain sweet corn, add to bowl.
- Bunch and slice cilantro, add to bowl.
- Combine mixture.
- Add lime juice, salt, pepper, and olive oil to mixture.
- Taste.
- Add more lime juice, salt, pepper, or olive oil if needed.
- Spoon onto choice of food. (I chose diced chicken breast on a soft tortilla. With TapatÃo.)
- Enjoy!
